I have the manual, but I am not sure how to do the evaluation, my people seem to have scored less than what is on your chart. How do I evaluate their performance?

When using any pegboard test for personnel selection, it is ideal to establish its validity locally by testing all newly hired employees and correlating the scores with their performance. The other option is to test present employees and correlate their scores with performance ratings.
